The Café de France serves our guests on the terrace along the ramparts or in a new dining room that has been completely redesigned with an authentic and functional/industrial decor.
Chef Christophe Bolis returned to his roots when he settled several years ago in the small Provencal village of Caderousse.
From his native Provence, with origins in a Provence "of the south", Corsica, he has kept the taste of authentic ingredients, flavors of flowers, herbs, good vegetables, strong meats, all from a land that is known and respected there. He perpetuates in his cooking this tradition of Nature, of simple and true things.
The Chef knows how to work the fish with delicacy, his presentations are refined, his desserts surprising and delicious like the Pavlova, an aristocratic and old-fashioned dessert that one can hardly taste nowadays.
