Savoillans is fortunate to have an old-fashioned bakery where bread is made with natural sourdough and baked over a wood fire using organic flour. Emmanuel and Chisato Delalande have developed a specialty of breads and cookies made with petit épeautre...
At the foot of Mont Ventoux, in the pretty Toulourenc valley, the bakery is the village's ray of sunshine.
The wood-fired oven is in the store; it dates back to 1935, and is equipped with a gueulard to direct the flame onto the vault, as in the old days.
This special baking method requires precise heating before the bread is baked on the stone hearth. A process that must be repeated for the next batch... In other words, natural sourdough kneading is totally artisanal.
Alongside a dozen or so classic and special breads (Fougasses, petit épeautre, wholemeal, walnut, chestnut, etc.), the bakery offers seasonal specialties: traditional Provencal Easter brassadeaux, Christmas pumps, king's cakes, seasonal tarts... And homemade viennoiseries and other gourmet cookies for hikers and more!
